For the Filling:

  • Boiled eggs: 4 (halved)
  • Boiled potatoes (mashed): 2 large
  • Onion (finely chopped): 1 medium
  • Green chilies (chopped): 2
  • Ginger paste: 1 tsp
  • Garlic paste: 1 tsp
  • Red chili powder: 1/2 tsp
  • Garam masala: 1/2 tsp
  • Salt: to taste
  • Fresh coriander leaves (chopped): 1 tbsp
  • Mustard oil: 1 tbsp (or regular oil)

For Coating & Frying:

  • All-purpose flour (maida): 2 tbsp (for slurry)
  • Breadcrumbs: as needed
  • Oil: for deep frying

Making process

Step 1: Prepare the Masala:

  1. Heat oil in a pan. Sauté chopped onion, ginger, garlic, and green chilies until golden.
  2. Add red chili powder, garam masala, and salt. Mix in mashed potatoes and coriander leaves. Cook for 2–3 mins.

Step 2: Wrap the Eggs:

  1. Take a portion of the potato mixture and flatten it on your palm.
  2. Place half an egg in the center and wrap the mixture around it. Shape like a chop or oval.

Step 3: Coat and Fry:

  1. Make a slurry using maida and water. Dip each chop into the slurry, then roll in breadcrumbs.
  2. Deep fry in hot oil until golden brown and crispy.

Step 4: Serve:

  1. Serve hot with ketchup or kasundi and salad on the side.
