For the Chicken Marinade:

  • Boneless chicken (small pieces): 300 grams
  • Ginger-garlic paste: 1 tbsp
  • Red chili powder: 1 tsp
  • Turmeric powder: 1/2 tsp
  • Coriander powder: 1 tsp
  • Cumin powder: 1/2 tsp
  • Salt: to taste
  • Lemon juice or vinegar: 1 tbsp
  • All-purpose flour (maida): 2 tbsp
  • Cornflour: 1 tbsp
  • Egg: 1 (optional, for binding)
  • Oil: for deep frying

For Tempering (Optional):

  • Oil: 1 tbsp
  • Green chilies (slit): 3–4
  • Curry leaves: 1 sprig
  • Garlic (sliced): 4–5 cloves

Making process

Step 1: Marinate the Chicken:

  1. In a bowl, mix chicken with ginger-garlic paste, chili powder, turmeric, coriander, cumin, salt, lemon juice, maida, cornflour, and egg.
  2. Cover and marinate for at least 30 minutes.

Step 2: Deep Fry:

  1. Heat oil in a deep pan. Fry the marinated chicken pieces in batches until crispy and golden brown.
  2. Drain on paper towels.

Step 3: Temper (Optional):

  1. In a pan, heat 1 tbsp oil. Add sliced garlic, curry leaves, and green chilies. Sauté until aromatic.
  2. Add the fried chicken and toss well for 1–2 minutes.

Step 4: Serve:

  1. Serve hot as a starter or side, garnished with onion rings and lemon wedges.
