For the Marinade:

  • Paneer (cottage cheese), cubed: 250 grams
  • Thick curd (yogurt): 1/2 cup
  • Ginger-garlic paste: 1 tbsp
  • Red chili powder: 1 tsp
  • Turmeric powder: 1/4 tsp
  • Coriander powder: 1 tsp
  • Garam masala: 1/2 tsp
  • Chaat masala: 1/2 tsp
  • Lemon juice: 1 tbsp
  • Salt: to taste
  • Mustard oil (or any oil): 1 tbsp

For Grilling:

  • Capsicum (bell peppers), cut into cubes: 1
  • Onion, cut into petals: 1
  • Skewers: as needed

Making process

Step 1: Prepare the Marinade:

  1. In a large bowl, mix curd with all the spices, ginger-garlic paste, lemon juice, and mustard oil.

Step 2: Marinate:

  1. Add paneer cubes, capsicum, and onion to the marinade. Coat well.
  2. Cover and refrigerate for at least 30 minutes (or up to 2 hours for better flavor).

Step 3: Skewer and Grill:

  1. Thread the marinated paneer and veggies alternately onto skewers.
  2. Grill in an oven, on a tawa (pan), or over charcoal until golden and slightly charred.

Step 4: Serve:

  1. Sprinkle with chaat masala and serve hot with mint chutney and lemon wedges.
