  • Carrots (sliced or julienned): 1/2 cup
  • Broccoli florets: 1 cup
  • Mushrooms (sliced, optional): 1/2 cup
  • Red chili flakes (adjust to taste): 1/2 tsp
  • Dried oregano: 1/2 tsp
  • Dried basil: 1/2 tsp
  • Salt and black pepper: to taste
  • Pasta sauce (marinara or tomato-based sauce): 1 cup
  • Grated Parmesan cheese (optional, for garnish): 1/4 cup
  • Fresh basil or parsley (for garnish)

Making process

Step 1: Cook the Pasta:

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente (usually 8-10 minutes).
  3. Drain the pasta, reserving 1/4 cup of pasta water, and set aside.

Step 2: Sauté the Vegetables:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and cook for about 30 seconds until fragrant.

Step 3: Add the Vegetables:

  1. Add the bell pepper, zucchini, carrots, broccoli, and mushrooms to the skillet.
  2. Sauté the vegetables for about 5-7 minutes, until they are tender-crisp but not too soft.

Step 4: Add Cherry Tomatoes and Seasonings:

  1. Add the cherry tomatoes and cook for 2-3 minutes until they soften.
  2. Season with red chili flakes, oregano, basil, salt, and black pepper. Stir to combine.

Step 5: Add Sauce and Pasta:

  1. Pour in the pasta sauce and stir well. Allow it to simmer for 2-3 minutes to let the flavors blend.
  2. Add the cooked pasta to the skillet and toss to coat evenly. If the sauce is too thick, add a bit of the reserved pasta water until it reaches your desired consistency.

Step 6: Serve:

  1. Taste and adjust seasoning if needed.
  2. Garnish with grated Parmesan cheese and fresh basil or parsley if desired.
