For the Dal:

  • Toor dal (split pigeon peas): 1/2 cup
  • Chana dal (split Bengal gram): 1/4 cup
  • Moong dal (yellow lentils): 1/4 cup
  • Urad dal (split black gram): 2 tbsp
  • Water: 4 cups
  • Turmeric powder: 1/2 tsp
  • Salt: to taste
  • Ghee: 2 tbsp
  • Cumin seeds: 1 tsp
  • Hing (asafoetida): a pinch
  • Garlic (finely chopped): 4 cloves
  • Ginger (grated): 1 tsp
  • Green chilies (chopped): 2
  • Tomatoes (chopped): 2 medium
  • Red chili powder: 1 tsp
  • Coriander powder: 1 tsp

For the Baati:

  • Whole wheat flour: 2 cups
  • Sooji (semolina): 1/4 cup
  • Ghee: 1/2 cup (melted)
  • Carom seeds (ajwain): 1/2 tsp
  • Salt: to taste
  • Water: as needed (for kneading)
  • Ghee: for dipping baatis

For the Churma:

  • Whole wheat flour: 1 cup
  • Sooji (semolina): 1/4 cup
  • Ghee: 1/4 cup
  • Milk: 2-3 tbsp (for binding)
  • Powdered sugar or jaggery: 1/2 cup
  • Cardamom powder: 1/2 tsp
  • Chopped nuts (almonds, cashews): 2 tbsp

Making process

Step 1: Prepare the Dal:

  1. Wash and soak all dals for 30 minutes.
  2. Pressure cook with turmeric, salt, and water for 3–4 whistles until soft.
  3. Heat ghee in a pan, add cumin, hing, garlic, ginger, and green chilies. Sauté briefly.
  4. Add chopped tomatoes, red chili, and coriander powder. Cook until oil separates.
  5. Mix in the cooked dal and simmer for 10–15 minutes. Adjust salt and consistency.

Step 2: Make the Baati:

  1. Combine wheat flour, sooji, salt, ajwain, and ghee. Mix until crumbly.
  2. Add water gradually and knead into a stiff dough.
  3. Divide into lemon-sized balls and flatten slightly.
  4. Bake in a preheated oven at 180°C (356°F) for 25–30 minutes or until golden brown, flipping halfway.
  5. Dip hot baatis in melted ghee before serving.

Step 3: Prepare the Churma:

  1. Mix wheat flour, sooji, and ghee. Add milk to make a stiff dough.
  2. Shape into small balls and bake like baatis until golden.
  3. Crush the baatis coarsely once cooled.
  4. Mix with powdered sugar, cardamom, and nuts.

Step 4: Serve:

  1. Serve hot dal with ghee-dipped baatis and sweet churma on the side.
  2. Optional: Add ghee on top for extra richness.
