For the Dough:

  • Whole wheat flour (atta): 2 cups
  • All-purpose flour (optional, for softness): 1/4 cup
  • Yogurt (dahi): 1/4 cup
  • Baking powder: 1/2 tsp
  • Salt: 1/2 tsp
  • Oil or ghee: 1 tbsp (plus more for brushing)
  • Warm water: as needed (approx. 1/2 cup)

Making process

Step 1: Make the Dough:

  1. In a large bowl, mix wheat flour, all-purpose flour, baking powder, and salt.
  2. Add yogurt and oil. Mix well with hands.
  3. Add warm water gradually and knead into a soft, smooth dough.
  4. Cover and let it rest for 20–30 minutes.

Step 2: Shape the Rotis:

  1. Divide the dough into equal portions and roll into balls.
  2. Dust with dry flour and roll each ball into a medium-thick round roti.

Step 3: Cook the Rotis:

  1. Preheat a tandoor, oven with baking stone, or a cast-iron tawa on high heat.
  2. Place roti on hot tawa or stick to the wall of tandoor if using one.
  3. Cook until bubbles form and flip when golden spots appear. Cook the other side similarly.
  4. For a smoky effect, use direct flame for 10 seconds per side.

Step 4: Serve:

  1. Brush hot rotis with ghee or butter.
  2. Serve hot with dal, sabzi, or curry of choice.
