For Marinade:

  • Chicken: 500 grams
  • Yogurt: 125 ml (1/2 cup)
  • Lemon juice: 15 ml (1 tbsp)
  • Ginger-garlic paste: 15 ml (1 tbsp)
  • Red chili powder: 5 grams (1 tsp)
  • Turmeric powder: 2.5 grams (1/2 tsp)
  • Garam masala: 2.5 grams (1/2 tsp)
  • Salt: to taste

For Sauce:

  • Butter: 30 grams (2 tbsp)
  • Oil: 15 ml (1 tbsp)
  • Onion: 1 large, finely chopped
  • Ginger-garlic paste: 15 ml (1 tbsp)
  • Tomatoes: 3 medium, chopped
  • Tomato purée: 125 ml (1/2 cup)
  • Red chili powder: 5 grams (1 tsp)
  • Turmeric powder: 2.5 grams (1/2 tsp)
  • Coriander powder: 5 grams (1 tsp)
  • Garam masala: 2.5 grams (1/2 tsp)
  • Fresh cream: 125 ml (1/2 cup)
  • Honey or sugar: 15 ml (1 tbsp, optional)
  • Salt: to taste
  • Fresh coriander leaves: for garnish

Making process

Step 1: Marinate the Chicken:

  1. In a large bowl, mix yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric, garam masala, and salt.
  2. Add chicken pieces, mix well to coat, and marinate for 30 minutes (or refrigerate for up to 2 hours for deeper flavor).

Step 2: Cook the Chicken:

  1. Heat a grill pan or a regular skillet. Add a little oil and cook the marinated chicken on medium heat for 6-8 minutes until it's golden and cooked through. Set aside.

Step 3: Prepare the Sauce:

  1. In the same pan, heat butter and a bit of oil.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste, and stir until the raw smell goes away.
  4. Add chopped tomatoes and cook until they soften.
  5. Stir in tomato purée, red chili powder, turmeric, coriander powder, and salt.
  6. Cook for 5-7 minutes until the oil separates.

Step 4: Blend the Sauce (Optional):

  1. Cool the sauce slightly, then blend until smooth for a velvety texture. Return it to the pan.

Step 5: Combine and Simmer:

  1. Add the cooked chicken to the sauce and simmer for 10 minutes, allowing the flavors to blend.
  2. Add cream and garam masala, stirring well. Taste and add honey or sugar if needed for balance.

Step 6: Garnish and Serve:

  1. Garnish with fresh coriander and a swirl of cream. Serve hot with naan, rice, or roti.
