For Basundi:

  • Full-fat milk: 1 liter
  • Sugar: 1/4 to 1/3 cup (adjust to taste)
  • Cardamom powder: 1/2 tsp
  • Saffron strands: a few (optional)
  • Chopped nuts (almonds, pistachios): 2–3 tbsp
  • Rose water or kewra water: a few drops (optional)

Making process

Step 1: Boil and Simmer Milk:

  1. In a heavy-bottomed pan, bring milk to a boil.
  2. Lower the flame and simmer. Stir continuously to prevent sticking or burning.

Step 2: Reduce the Milk:

  1. Continue simmering until milk is reduced to half its volume (takes around 40–45 minutes).
  2. Scrape the cream from the sides and mix it back into the milk.

Step 3: Add Sugar and Flavors:

  1. Add sugar, cardamom powder, saffron, and rose/kewra water (if using). Mix well and simmer for another 5–10 minutes.

Step 4: Garnish and Chill:

  1. Add chopped nuts and stir gently.
  2. Cool to room temperature, then refrigerate. Serve chilled.
