For the Sandesh:

  • Full-fat milk: 1 liter
  • Lemon juice or vinegar: 2 tbsp (for curdling)
  • Powdered sugar: 4–5 tbsp (adjust to taste)
  • Cardamom powder: 1/4 tsp
  • Saffron strands or rose water: optional
  • Pistachios or almonds: for garnish (optional)

Making process

Step 1: Prepare Chhena (Paneer):

  1. Boil milk in a heavy pan. Once it boils, add lemon juice/vinegar and stir until it curdles completely.
  2. Strain through a muslin cloth and rinse with cold water. Squeeze out excess water and let it rest for 30 minutes.

Step 2: Knead the Chhena:

  1. Transfer the chhena to a plate. Knead with your palm for 7–10 minutes until smooth and soft.

Step 3: Cook the Mixture:

  1. Heat a non-stick pan, add chhena, and cook on low flame for 4–5 minutes. Stir continuously.
  2. Add powdered sugar and cardamom powder. Cook for another 2–3 minutes until the mixture thickens slightly.

Step 4: Shape the Sandesh:

  1. Remove from heat and let it cool slightly. Shape into small discs or use molds for decorative shapes.
  2. Garnish with chopped pistachios or almonds. Chill before serving if desired.
