For the Jalebi Batter:

  • All-purpose flour (maida): 1 cup
  • Yogurt: 2 tbsp
  • Corn flour: 1 tbsp
  • Water: as needed
  • Baking soda: a pinch (optional, if not fermenting overnight)
  • Yellow food color: a pinch (optional)
  • Ghee or oil: for frying

For the Sugar Syrup:

  • Sugar: 1 cup
  • Water: 1/2 cup
  • Lemon juice: 1/2 tsp
  • Cardamom powder: 1/4 tsp
  • Saffron strands or rose water: optional

Making process

Step 1: Prepare the Batter:

  1. In a bowl, mix maida, corn flour, yogurt, food color, and enough water to form a smooth, flowing batter.
  2. Cover and ferment for 8-10 hours or overnight (or add baking soda if making instantly).

Step 2: Make Sugar Syrup:

  1. Boil sugar and water together until slightly sticky (one-thread consistency).
  2. Add lemon juice, cardamom, and saffron or rose water. Keep syrup warm.

Step 3: Fry the Jalebi:

  1. Heat ghee or oil in a flat pan. Pour batter into a piping bag or squeeze bottle.
  2. Pipe spiral shapes directly into hot oil. Fry on low-medium heat until crisp and golden.

Step 4: Soak and Serve:

  1. Immediately transfer fried jalebis into warm sugar syrup. Let them soak for 1-2 minutes.
  2. Remove and serve hot or warm.
