For the Boondi:

  • Besan (gram flour): 1 cup
  • Water: as needed (to make flowing batter)
  • Oil or ghee: for deep frying

For the Sugar Syrup:

  • Sugar: 1 cup
  • Water: 1/2 cup
  • Cardamom powder: 1/2 tsp
  • Saffron strands or food color: a pinch (optional)

For Garnish (Optional):

  • Chopped nuts (cashews, almonds): 2 tbsp
  • Raisins: 1 tbsp

Making process

Step 1: Prepare the Batter:

  1. Mix besan with enough water to form a smooth, flowing batter.
  2. Ensure no lumps remain. Let it rest for 10 minutes.

Step 2: Fry the Boondi:

  1. Heat oil or ghee in a deep pan. Hold a perforated ladle over the oil and pour batter over it to form tiny drops (boondi).
  2. Fry until golden but not crispy. Remove and drain on paper towels.

Step 3: Make Sugar Syrup:

  1. Boil sugar and water together until sticky (1-thread consistency).
  2. Add cardamom powder and saffron or color if using.

Step 4: Mix Boondi and Syrup:

  1. Immediately add the fried boondi into hot syrup. Mix well to coat evenly.
  2. Add fried nuts and raisins if using. Let it absorb syrup for 10–15 minutes.

Step 5: Shape the Ladoos:

  1. When the mixture is warm (not hot), grease your hands and form small ladoos by gently pressing portions into round balls.
  2. Let them set for 30 minutes. Store in an airtight container.
