For the Gajar Halwa:

  • Carrots (grated): 4 cups (about 500g)
  • Full-fat milk: 2 cups
  • Sugar: 3/4 to 1 cup (adjust to taste)
  • Ghee: 4 tbsp
  • Cardamom powder: 1/2 tsp
  • Cashews: 10 (chopped)
  • Raisins: 10–15
  • Almonds or pistachios: for garnish (optional)

Making process

Step 1: Sauté Carrots:

  1. Heat 2 tbsp ghee in a heavy pan. Add grated carrots.
  2. Sauté on medium heat for 5–7 minutes until slightly soft.

Step 2: Cook with Milk:

  1. Add milk and bring to a boil. Reduce heat and simmer.
  2. Stir often and cook until milk reduces and thickens (20–30 minutes).

Step 3: Add Sugar and Flavor:

  1. Mix in sugar. Stir continuously as the halwa becomes moist again.
  2. Cook until it thickens again. Add remaining ghee and cardamom powder.

Step 4: Garnish and Serve:

  1. In a small pan, fry cashews and raisins in ghee. Add to halwa.
  2. Garnish with almonds or pistachios. Serve warm or chilled.
