For the Gulab Jamun Balls:

  • Khoya (mawa): 1 cup (grated or crumbled)
  • All-purpose flour (maida): 2 tbsp
  • Baking soda: 1/8 tsp
  • Milk: 2–3 tbsp (as needed to make dough)
  • Ghee or oil: for deep frying

For the Sugar Syrup:

  • Sugar: 1.5 cups
  • Water: 1.5 cups
  • Cardamom pods: 2–3 (crushed)
  • Rose water or kewra essence: 1 tsp (optional)

Making process

Step 1: Prepare Sugar Syrup:

  1. In a pan, combine sugar, water, and cardamom pods. Boil until slightly sticky.
  2. Add rose water or essence, turn off the heat. Keep warm.

Step 2: Make Dough:

  1. Mix khoya, flour, and baking soda in a bowl.
  2. Add milk gradually and knead into a smooth, soft dough.
  3. Cover and rest for 10 minutes.

Step 3: Shape and Fry:

  1. Divide the dough into small balls without cracks.
  2. Heat ghee/oil on medium-low. Fry balls until golden brown, turning gently.

Step 4: Soak in Syrup:

  1. Remove fried balls and drain excess oil.
  2. Place them in warm sugar syrup for at least 1 hour.
  3. Serve warm or chilled, garnished with pistachios if desired.
