Ingredients

  • 1 cup chickpeas (chole), soaked overnight
  • 2 medium onions (finely chopped)
  • 2 medium tomatoes (pureed)
  • 2 green chilies (chopped)
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons chole masala powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon asafoetida (hing, optional)
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves (chopped, for garnish)
  • Water as needed
  • For Bhature:
  • 2 cups all-purpose flour (maida)
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Water (as needed to knead dough)
  • Oil for deep frying

Making process

Step 1: Prepare the Chickpeas

  1. Drain soaked chickpeas and pressure cook with enough water until soft (about 15-20 minutes).
  2. Reserve some cooking water and set chickpeas aside.

Step 2: Make the Chole Masala

  1. Heat oil or ghee in a pan, add cumin seeds and asafoetida; let them splutter.
  2. Add chopped onions, sauté until golden brown.
  3. Add ginger-garlic paste and green chilies; sauté until raw smell disappears.
  4. Add tomato puree, turmeric, chili powder, and salt; cook until oil separates.
  5. Add chole masala powder and mix well.
  6. Add cooked chickpeas along with some reserved water for desired consistency.
  7. Simmer on low heat for 15–20 minutes, stirring occasionally.
  8. Add garam masala and cook for another 2 minutes.

Step 3: Prepare the Bhature Dough

  1. Mix all-purpose flour, baking powder, sugar, and salt in a bowl.
  2. Add yogurt and knead to form a soft dough, adding water as needed.
  3. Cover and let it rest for at least 1 hour.

Step 4: Fry the Bhature

  1. Divide dough into small balls and roll each into a round disc (not too thin).
  2. Heat oil in a deep frying pan on medium-high heat.
  3. Fry each bhatura until puffed and golden brown on both sides.
  4. Drain on paper towels to remove excess oil.

Step 5: Serve

  1. Garnish chole with fresh coriander leaves.
  2. Serve hot chole with freshly fried bhature, along with sliced onions and lemon wedges.
