Dhokla

Dhokla is a soft, spongy Gujarati snack made from fermented gram flour batter. It's steamed, mildly spiced, and served with chutney—perfect for any time!

For the Batter:

  • 1 cup besan (gram flour)
  • 1 tablespoon semolina (sooji) – optional
  • 1 tablespoon sugar
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon lemon juice or citric acid
  • 1 teaspoon Eno fruit salt (or 1/2 tsp baking soda + 1/2 tsp lemon juice)
  • Salt to taste
  • 3/4 cup water (adjust as needed for a smooth batter)

For the Tempering:

  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon sesame seeds (optional)
  • 1–2 green chilies, slit
  • A few curry leaves
  • 2–3 tablespoons water
  • 1/2 teaspoon sugar (optional)

Making process

Step 1: Prepare the Batter

  1. In a bowl, mix besan, semolina, sugar, turmeric, lemon juice, salt, and water to form a smooth batter.
  2. Rest the batter for 10–15 minutes.

Step 2: Add Eno and Steam

  1. Grease a dhokla tray or any flat-bottomed bowl and prepare your steamer.
  2. Just before steaming, add Eno fruit salt to the batter and stir gently. It will become frothy and light.
  3. Immediately pour into the greased tray and steam for 15–20 minutes on medium flame or until a toothpick comes out clean.

Step 3: Prepare Tempering

  1. Heat oil in a small pan. Add mustard seeds and let them crackle.
  2. Add sesame seeds, green chilies, curry leaves, sugar, and a little water. Boil for 1 minute.

Step 4: Assemble and Serve

  1. Pour the tempering evenly over the steamed dhokla.
  2. Let it soak for a few minutes, then cut into squares or diamonds.
  3. Serve with green chutney or sweet tamarind chutney.
