Dry Ingredients:

  • 1 cup multigrain flour (or 1/4 cup each of jowar, bajra, rice flour, wheat flour, and besan)
  • 1 small onion, finely chopped
  • 1–2 green chilies, finely chopped
  • 2 tablespoons coriander leaves, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon sesame seeds
  • 1/4 teaspoon turmeric powder
  • Salt to taste

Optional:

  • 1 grated carrot or 2 tablespoons grated cucumber

For Cooking:

  • Water (for kneading)
  • Oil or ghee (for shallow frying)

Making process

Step 1: Make the Dough

  1. In a bowl, mix all flours with onion, chilies, coriander, cumin, sesame, turmeric, salt, and optional vegetables.
  2. Add water gradually and knead into a soft, slightly sticky dough. Let it rest for 10 minutes.

Step 2: Shape the Thalipeeth

  1. Take a portion of dough and flatten it on a banana leaf or plastic sheet using wet fingers.
  2. Shape it into a round disc (5–6 inches) and make a small hole in the center.

Step 3: Cook

  1. Heat a tawa and grease it with oil or ghee.
  2. Place the thalipeeth on the tawa, peel off the sheet, and cook on medium flame.
  3. Add oil around the edges and center. Flip and cook both sides until golden and crisp.

Step 4: Serve

  1. Serve hot with curd, white butter, or pickle.
  2. Enjoy your wholesome Maharashtrian thalipeeth!
