Ingredients

For the Luchi:

  • 2 cups all-purpose flour (maida)
  • 1 tablespoon ghee or oil
  • A pinch of salt
  • Water (as needed for kneading)
  • Oil (for deep frying)

For the Aloo Dum:

  • 4-5 small potatoes, boiled and peeled
  • 1 large onion, finely chopped
  • 1 tomato, pureed
  • 1 teaspoon ginger paste
  • 1/2 teaspoon cumin seeds
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander (for garnish)
  • Oil (for cooking)

Making process

Step 1: Prepare the Luchi Dough

  1. In a bowl, mix flour, ghee/oil, and a pinch of salt.
  2. Add water gradually and knead into a smooth, soft dough.
  3. Cover and rest the dough for 15–20 minutes.

Step 2: Prepare the Aloo Dum

  1. Heat oil in a pan. Add cumin seeds and bay leaf.
  2. Add chopped onion and sauté until golden.
  3. Add ginger paste and cook until the raw smell disappears.
  4. Stir in tomato purée, turmeric, chili powder, and salt.
  5. Cook until oil separates (about 5–7 minutes).
  6. Add boiled potatoes, mix well, and add a little water to form a gravy.
  7. Simmer for 10 minutes. Sprinkle garam masala and garnish with coriander.

Step 3: Roll and Fry the Luchi

  1. Divide the dough into small balls and roll each into a flat disc.
  2. Heat oil in a deep pan for frying.
  3. Fry each luchi one by one until puffed and golden. Drain excess oil on paper towels.

Step 4: Serve

  1. Serve hot luchis with the spicy, flavorful aloo dum.
  2. Enjoy your classic Bengali comfort meal!
